The story
TIAN in Vienna serves vegetarian haute cuisine at Himmelpfortgasse 23, 1010 Vienna. Gault&Millau gave it 18 points in 2026, and the guide ranks it number one in the city. The menu is vegetarian and can also be ordered vegan.
Paul Ivić ferments, marinates and cooks vegetables briefly or slowly, and rarely pan-fries them. The kitchen works from root to leaf, so the same produce yields stocks, gels and essences alongside the plated courses. The guide credits Ivić with building deep aromas and flavor without relying on meat, which is why meat-eaters often find the food approachable.
The menu changes with the season and lists its main ingredients rather than dish names. Recent courses paired fennel with asparagus salad, cucumber with basil, and knob celery with mushroom and koji. A dessert combined milk rice, currant and saffron. Guests choose an eight-course or six-course menu. The kitchen cannot accommodate mushroom or celery allergies on the menu.
The wine pairing is selected by André Drechsel and Nico Hammerl from an extensive international list. The house also offers a homemade alcohol-free pairing for the same courses. Both options are designed to follow the progression of the menu course by course.
