The story
Restaurant GERBER WYSS, at Rue du Four 1 in Yverdon-les-Bains, serves Classic French cooking with a fermentation and cold-concentration streak, and it holds one Michelin star for 2026. The Gault&Millau guide has raised its score two years running, now at 17 points.
Chef Grégory Wyss builds his menu around top-quality local products. He uses cryoconcentration, which draws moisture out of ingredients with cold and intensifies their flavour. The kitchen also ferments with care, and the Classic French base stays recognisable beneath these newer techniques.
Laurena Wyss served a sot l'y laisse with hazelnuts and mushroom purée, with a cryoconcentrated jus that carried strong aroma. Egli from Lake Neuchâtel came with a watercress sabayon and garum, the ancient Roman fermented fish sauce. A raviolo filled with local crayfish and a toast-flavoured beignet completed the savoury courses.
The owners trained as pastry chefs at the Hôtel de Ville in Crissier, and the sweets show it. A pear sorbet with nasturtium espuma and a malakoff with apple and umeboshi, the salted plum, close the meal alongside a dark chocolate and black lemon variation. Sommelière Mathilda Hornez guides guests through the wine list.
