The story
PUR Hurden, at Hurdnerstrasse 137 in Hurden near Rapperswil, is a classic cuisine restaurant on the Lake Zurich peninsula that Gault&Millau scored 15 in 2026. The house also offers seasonal dishes and fondue, and the setting is a 300-year-old inn beside the water.
Tarik Lange and Adrian Bührer run the kitchen. Lange worked at Zurich's Park Hyatt, and Bührer trained at Ascona's Giardino. The menu does not separate starters from main courses. Guests order two to four plates according to appetite, which keeps the meal flexible and social. The kitchen cooks with fresh local ingredients from selected producers.
Gault&Millau singled out the Lake Zurich fish ceviche, served cold with shaved fennel and citrus. The beef tartare comes with parmesan foam, artichoke, and capers. The bouillabaisse uses Lake Zurich fish with smoked paprika bacon. The pink Swiss Angus striploin, called "Rinderwahnsinn", is served with pumpkin cream and Café de Paris sauce. The menu insists that desserts are mandatory, and the zesty "false lemon" and a small Felchlin chocolate cake close the meal.
The Rössli Lounge indoors pairs modern design with historic character and suits relaxed evenings or private occasions. From April to September, the Lounge am See opens on the terrace above the lake, with views across the water toward the Alps. Cantina 1829 runs a fondue room from November to January.
