The story

Alte Friesenstube in Westerland, Sylt: Frisian Cooking in the Island's Oldest House

Alte Friesenstube, at Gaadt 4 in Westerland on Sylt, cooks regional Frisian food in the oldest Frisian house on the island, built in 1648. The Schlemmer Atlas awarded it 2 Kochlöffel in 2026.

A traditional kitchen with a modern touch

Chef Carsten Banse leads the kitchen, which he describes as traditional regional cooking with a modern touch. The team puts emphasis on fresh, carefully sourced ingredients. Several menu lines are written in Plattdeutsch, the Low German of the north coast, and the kitchen adapts classic recipes with a light creative hand.

Dishes from the Frisian table

Roast duck from the oven is a long-standing favourite on the menu. Pannfisch, a pan-fried mix of fish and potatoes with mustard sauce and salad, is the house take on a Frisian classic. Braaden Aant, a Holstein specialty of roast duck, and the Rote Grütze made with red currants and berries round out the traditional side. Rooms keep the rustic wooden furniture and tiled walls of the old house.
