The story
Stephans Stuben by Marco Langer, at Bahnhofstraße 65 in Neu-Ulm, holds one Michelin star (2026) for a fusion kitchen that pairs global flavors with regional produce. It sits on the Bavarian bank of the Danube, a short walk from Ulm.
Marco Langer is both chef and owner. He writes a new menu every two months and keeps it hidden until guests arrive. You choose between a classic and a vegetarian version, in four or six courses, under the theme "Curtain Up". There is no vegan option, since dairy, eggs and butter from the region are central to the cooking. Each dish is explained at the table.
Der Feinschmecker (2.5, 2026) praises the playful presentation of this international cooking. Amber mackerel comes lightly marinated with melon as sphere and gelée, plus sunflower seeds. Chicken from Geflügelhof Kaiser in Öllingen is paired with millet, pickled cherries and mustard seeds. The spring menu lists Faroese salmon with cauliflower, garlic and miso, and Stubenküken with lentil, beet and purple curry.
Behind historic walls, the older rustic decor has been refreshed but still feels down-to-earth. A portrait of Herbert von Karajan hangs on the wall. The list runs to about 80 wines, mostly German, at guest-friendly prices. Fabian Klosterberg leads the service as sommelier and restaurant manager.
