The story
Schranners Waldhorn, at Schönbuchstraße 49 in Tübingen, is a family-run restaurant serving classic, seasonal cuisine with a French streak. The Schlemmer Atlas gave it 3 Kochlöffel for 2026.
Max Schranner cooks, and Marie-Luise Schranner runs service and organisation. His kitchen pairs the classics of German home cooking with ideas from his years of training and travel, including Hotel Bareiss in Baiersbronn and Gasthaus zum Gupf in Rehetobel. The Schlemmer Atlas describes the restaurant as down-to-earth yet elegant, and the Michelin Guide lists it as Recommended for 2026.
Lunch runs Wednesday to Sunday, with a two- or three-course menu and a short à la carte list beside it. That list has included seared duck liver with brioche and pickled pears, beef tartare with quail egg, and onion roast with Spätzle. In the evening the card is split into three menus, and you can also order single dishes. Recent evening plates include sashimi of Adlerfisch with almond gazpacho and a saffron fish foam soup. Themed nights, such as a French classics evening with frog's legs and chocolate soufflé, appear through the year.
The dining rooms are the Waldhorn-Stube, with up to 40 seats, and the Schloss-Stube, with 25. In summer the terrace sits beside the Seebach. Private dining is available for christenings, weddings and other family celebrations.
