The story
Springbrunnen SKLENAR is a Mediterranean and fusion restaurant at Springstraße 11 in Oberkirch, Germany, and it holds a 2026 Michelin Guide recommendation. The house sits below the vineyards of Tiergarten in the Baden wine country, where Balearic dishes share the menu with regional Baden cooking.
Chef de cuisine Martin Sklenar lived on Mallorca for almost 30 years, and that shows in the menu. The kitchen cooks with fresh regional ingredients and changes the à la carte almost daily. The day's dishes are written on a large board inside the restaurant.
Gambas al ajillo arrive in garlic olive oil in the Mallorcan style. The Gató de almendras, a Mallorcan almond cake with almond ice cream, is a house classic. For dessert, the warm Bohemian Powidl dumplings are filled with plum purée and served with chestnut ice cream. Larger plates include Ibérico pork fillet and a Chateaubriand for two with béarnaise.
Up to 50 guests fit in the restaurant, and the intimate garden among the vines offers outdoor seating. The Schlemmer Atlas awards it 2.5 Kochlöffel for its cozy dining areas and homely character. The wine list draws on regional estates such as Weingut Ullenburg, and the beer comes from Bauhöfer, a family brewery about 4 km away. The restaurant also hosts private events and sells gift vouchers.
