The story
Adler Wirtschaft, at Hauptstraße 31 in Eltville am Rhein, is a French-leaning kitchen in Nieder-Ingelheim that earned a 2026 Michelin Recommended distinction. The restaurant has run since 1993 on a simple idea that Franz Keller and his father built on: "Vom Einfachen das Beste," or the best from simple things.
The kitchen works with animals raised on the family's Falkenhof in the Taunus. The team knows its Charolais and Limousin cattle, Bunte Bentheimer free-range pigs and Meissner Widderkaninchen rabbits closely. Every animal is used nose to tail, including game from hunting. Sourcing is the reason the French classic cooking here tastes the way it does.
The menu changes with the season and includes a plat du jour, with a separate steak card and a Sunday roast. Inside, round oak tables sit on an old wooden floor beside an open fireplace. Candlelight in the evening makes the room feel quiet and close. In summer guests can sit on the wine terrace, and the winter garden offers a second setting.
The Rheingau's Riesling country shapes the wine list, and an experienced sommelière guides pairings for the meal. Cooking seminars are also held here, announced on the restaurant's website.
