The story
SCALA, on floors 27 to 29 of the JenTower at Leutragraben 1 in Jena, runs a modern International kitchen built around plates meant for the middle of the table. The restaurant holds a Michelin Recommended mention (2026).
Christian Hempfe took over SCALA from founder Andreas Machner in 2020, and chef Matthias Mänz leads the kitchen. The cooking pairs regional ingredients with premium products from abroad. Guests eat from shared dishes served on crystal bowls and stone slabs.
Der Feinschmecker describes a five-course sharing menu. Halibut fillet comes with red beet and grain pops, and US beef tournedos Rossini sit beside a light potato soufflé. Every course is portioned to share, so the meal moves at the pace of the table.
Floor-to-ceiling glass looks out over the Thuringian landscape, and seating is spread across several levels. The wine list gives priority to Saale-Unstrut estates such as Proppe and Lützkendorf, with bottles from California and the Languedoc as well. The house pilsner was brewed with Erfurt's HEIMATHAFEN and is poured exclusively in the restaurant.
