The story
Flux - Biorestaurant Werratal serves certified organic country cooking at Buschweg 40 in Hannoversch Münden, and the Michelin Guide gave it a Bib Gourmand in 2026 for good quality, good value cooking. The restaurant is part of the Biohotel Flux, which runs entirely on organic principles.
Everything here is certified organic, and most products come from Demeter or Bioland suppliers, preferably regional ones. Head chef Marius Mirchel leads the kitchen. The cooking is described as simple but adventurous, with equal attention to good meat and a committed vegan side. Menus change often with the season, and the team adapts dishes for lactose or gluten intolerance.
The Schlemmer Atlas awarded 2 Kochlöffel in 2026 and singles out soy spaghetti with wild herb pesto and blueberry compote with red wine ice cream. A menu on the restaurant's site has listed ravioli of Hokkaido pumpkin in Gruyère foam. Its vegan menu has included a millet and lentil curry with baked Hokkaido and coconut-orange sauce. Cakes are baked from old family recipes, served from 3 pm.
Tables and floors are solid oak from sustainable forestry. The walls are rendered with clay, and circulating water in them heats or cools the room. Dinner is by candlelight, with a wine cellar to match. When the weather allows, guests can sit on the large sun terrace.
