The story
the dune, at Paul-Ehrlich-Str. 9 in Frankfurt am Main, is a French fine dining restaurant in the City-Resort The Florentin of the Althoff Collection. Schlemmer Atlas awarded it 4 Kochlöffel in 2026, and Der Feinschmecker gave it 4 the same year.
Niclas Nußbaumer took over the kitchen in December 2025, after leading the kitchen at Hotel Mühle am Schluchsee. His cooking is French at its core, with Japanese influences and a modern, high-quality approach. Der Feinschmecker describes him as one of the leading talents of his generation, cooking with depth rather than showiness.
The meal opens with yellowtail, marinated in the style of ceviche, under a lightly set vinaigrette with trout roe, celery and a chili kick. Norwegian langoustine is grilled briefly over charcoal and paired with crisp white almonds, a yuzu koshu vinaigrette and a light hollandaise made from the shells. The main course is venison saddle with spinach praline, marinated radicchio and shiitake, finished with vadouvan foam and a deep venison jus.
The room feels closer to a club than a restaurant, with dimmed lighting, a groovy soundtrack and comfortable booth seating. The service is friendly and unpretentious. The wine list runs to around 900 positions, with a focus on Germany and France, especially Burgundy and Bordeaux.
