The story
Seven Swans in Frankfurt am Main cooks vegan German food at Mainkai 4, and the Michelin Guide awarded it one star in 2026.
Every ingredient comes from the region, and the permaculture plots on the restaurant's own farm, about 30 kilometers away, supply the produce. Celery is baked in a dough made from immature grain stalks, served with reduced sauerkraut juice that carries surprising caramel notes and a sweet lupin oil reminiscent of coffee. Steamed beetroot arrives in a puff pastry parcel wrapped in steamed pointed cabbage leaves, with parsley root cream and a mushroom duxelles finished with a hollandaise-style sauce made from burnt onions.
The building is said to be the narrowest in the city, and several tables face the Main River. An atmospheric bar occupies the ground floor, and a small rooftop terrace adds a few seats outdoors. Beverage pairings offer three options each, one of them non-alcoholic.
