The story
L'Oustau de Baumanière, at 515 Route de Baumaniere in Les Baux de Provence, is a French restaurant in Maussane-les-Alpilles. It holds three Michelin stars for 2026, the guide's distinction for exceptional cuisine.
Glenn Viel leads the kitchen, and the restaurant describes his cooking as refined and creative. The estate also runs La Cabro d'Or, where Michel Hulin cooks a Provençal menu that the site calls savoury and generous. Both kitchens draw on the same Provence base, so the French and Provençal cooking often sit side by side on one property.
The cellar holds about 50,000 bottles of France's finest vintages, and the head sommelier oversees the selection in person. The house received a Wine Spectator Best of Award of Excellence in 2019. Its own pages also credit the wine list with a Best Wine List of France title for 2005.
