The story
L'Aupiho is a modern cuisine restaurant in Maussane-les-Alpilles, at Route de la Terre-des-Baux, Les Baux-de-Provence, 13520. It holds one Michelin star (2026) for high quality cooking. The restaurant sits within the Domaine de Manville estate in the Alpilles.
Lieven Van Aken, originally from Antwerp, worked with starred chefs including Lionel Rigolet, Michel Guerard and Olivier Brulard. His cooking questions harmony, invents pairings and respects the ingredient. The restaurant says Provence and the chef's own roots always find their way into the meal.
Many vegetables come from the estate's organic farm and form the signature dishes of L'Aupiho's vegetable menu. The kitchen also buys from local producers, including fish from the Grau du Roi auction, pork from Mont Ventoux, and gluten-free breads from Kom&sal, made by Nadia Sammut. The domaine's garden is run on permaculture principles.
Part of the meal takes place outdoors, and the gallery shows an open-air dining area at L'Aupiho. Outdoor seating and a set lunch menu are both offered.
