The story
Le Suquet - Sébastien Bras sits on the Route de l'Aubrac in Laguiole, France, and works as a BBQ restaurant built on charcoal and open-fire cooking. The Michelin Guide awarded it two stars in 2026 for excellent cooking.
Sébastien Bras draws on the land around the restaurant for a contemporary take on regional produce. The repertoire leans heavily on vegetables, and the set menus alternate between garden plates and meat. Kid goat is roasted over charcoal, and rhubarb is poached in gentian. The Smart Green Guide gave the restaurant five radishes in 2026.
The dining room is lit by daylight through stone and glass, with a clean, uncluttered design and a wine cellar on site. Three set menus run from 215 € to 300 €: Le Goût du Suquet, Le Goût du jardin, and Le Goût de l'Aubrac. The jardin menu is built around vegetables and ends with two desserts.
