The story
Bras Restaurant, known as Le Suquet, sits on Route de l'Aubrac in Laguiole and serves contemporary French cooking shaped by the surrounding plateau. The kitchen placed sixth on The World's 50 Best Restaurants list in 2007.
Sébastien Bras describes himself as a son of the Aubrac, and his cooking follows that attachment to the land. He gives the terroir a contemporary reading and draws on a wide repertoire of plants, with foraging (cueillette) central to the kitchen's identity. The aim is an intuitive, sensitive definition of what the Aubrac tastes like.
The building hangs between earth and air, with light and stone running through a clean, pared-back interior. Large views over the plateau come with the setting, and the cellar holds a serious wine collection. In the garden, thirteen suites and rooms look out over the same landscape.
Three tasting menus anchor the offer: Le Goût du Suquet at 215 €, Le Goût du jardin at 240 €, and Le Goût de l'Aubrac at 300 €. The restaurant also ranked ninth on the World's 50 Best list in 2004. The house reopens on Saturday 4 April 2026.
