The story
La Maison 1888 is a French restaurant in Da Nang, located at Thọ Quang, Da Nang, Vietnam. The kitchen holds a Michelin star (2026), and the cooking follows classical French technique inside a recreation of a colonial Indochine mansion.
Three-Michelin-star chef Christian Le Squer leads the kitchen and blends classical French methods with modern ideas. He compares his work to perfumery or couture, building flavours, textures and colours around fresh seasonal ingredients. The restaurant offers a standard set menu and a vegetarian set menu.
The Spaghetti Debout is the signature dish: spaghetti stood upright and filled with black truffle cream, finished with black truffle and ham. The cellar is a draw in its own right, and sommeliers suggest pairings for each evening. Wine Spectator awarded the wine list its Best of Award of Excellence in 2018.
Dinner is served in La Veranda, a candlelit room on the ground floor, or on the outdoor terrace. Upstairs, three private dining rooms are each themed after the fictional siblings who once lived in the house. One is filled with travel memorabilia, another is an accountants' room with antique adding machines, and the third is a boudoir for the sister.
