The story

Knife & Spoon, Orlando | Dry-Aged Steakhouse and Seafood at Grande Lakes

Knife & Spoon is an American steakhouse and seafood restaurant at 4012 Central Florida Pkwy. in Orlando, set within The Ritz-Carlton, Grande Lakes. It was listed as Michelin Recommended in 2026.

Dry-aged beef and Kobe

The steaks come from 44 Farms in Cameron, Texas, and are dry-aged for 45 to 240 days before being pan-seared. Certified Kobe beef also appears on the menu, a distinction the restaurant says only two kitchens in Central Florida share. Seafood is the other pillar, with daily catches from nearby waters served alongside seasonal local produce.

The kitchen

Chef John Tesar leads the cooking. He is a four-time James Beard "Best of Southwest Chef" semifinalist, a two-time "Top Chef" contestant and an "Extreme Chef" winner. His modern American cooking draws on classical European technique. Chef de Cuisine Tyler Kineman runs the line day to day.

The room and the bar

Schoos Design shaped the 235-seat dining room, with Venetian plaster walls in warm grays and jewel tones. A brass and turquoise bar anchors the space, and a cloud-like ceiling floats over a moss garden. Forbes Travel Guide gave the restaurant Four Stars in 2026. A Chef's Table and a terrace offer other places to sit. The wine list reaches for Canary Islands rarities and white Châteauneuf-du-Pape, and the cocktail list includes a Seared Citrus Old Fashioned made with 1792 bourbon.

All cuts undergo dry aging by Tesar himself, some as long as 240 days. For those not-too-balmy nights, the terrace is the place to watch the sunset.
