The story
Oyster Oyster is a contemporary restaurant at 1440 8th St. NW in Washington, DC, serving a vegetarian or vegan tasting menu built on Mid-Atlantic produce. The Michelin Guide lists it with one star for 2026, and the kitchen is known for working almost entirely from regional farms, orchards and mills.
Chef Rob Rubba opened the restaurant in Shaw with restaurateur and sommelier Max Kuller. The first months ran as a takeout operation during the pandemic, and the dining room opened in 2021. The cooking starts with whole ingredients. A vegetable is used from root to stem, potato peels become a deeply savory sauce, and day-old bread is fermented into miso.
Golden beets come with red cabbage, berbere spice, caraway cracker and dill. Lion's mane mushroom is served with spring herbs, toasted spelt and a brown butter-yogurt sauce. Asparagus arrives with morels, ramps and new potato. The strawberry course pairs verbena-pecan mousse with granola and bronze fennel, and the meal closes on a spicebush porcini shortbread.
The name points to two things: oyster mushrooms, a staple of the plant-forward kitchen, and Chesapeake oysters, which filter and restore the region's waters. Wine bottles are reborn as plates. The Green Guide gives the restaurant four radishes for 2026, a rating that reflects how closely the menu follows the seasons.
