The story
Lilac is a modern Mediterranean restaurant at 500 Channelside Drive in Tampa, on the main floor of The Tampa EDITION. The Michelin Guide awarded it one star in 2026, and the kitchen works from seasonal, locally sourced ingredients.
Chef John Fraser draws on his Greek heritage and his admiration for Turkish and French cuisines. The Mediterranean kitchen builds bold, expressive flavors from ingredients that change with the season. Fraser grew up in Los Angeles, moved from the stove to restaurateur in 2007, and runs his hospitality group, JF Restaurants, from New York City.
Guests can choose a chef-curated tasting menu or an à la carte menu. The website names spice-crusted tuna with chickpea-ramp hummus and scamp grouper à la plancha with eggplant caviar. Forbes Travel Guide, which awarded Four-Star in 2026, highlighted herbed pasta with a soft egg and sherry-braised chanterelles, along with grouper or red snapper cooked Portuguese-style in a tableside cataplana. Requests for dietary substitutions are handled without fuss.
The dining room has walnut flooring and globe pendant lights. An eight-seat chef's counter in sandblasted walnut faces the open kitchen, where some dishes are finished tableside. Forbes notes a champagne cart that mixes cocktails at the table and serves them in signature flutes.
