The story
Le Cirque is a French restaurant at 3600 Las Vegas Boulevard South, inside the Bellagio in Las Vegas. Forbes Travel Guide awarded it Five-Star status for 2026, and the kitchen serves a classic French menu in a room with a playful circus theme.
Executive Chef Jonathan Doukhan leads the kitchen, and the menu keeps French structure while adding bold contemporary touches. The potato-crusted Mediterranean sea bass is a signature, along with rabbit symphony in Riesling mustard cream sauce and Japanese wagyu beef strip loin. Ossetra caviar and ricotta gnudi also appear among the house favorites.
Adam D. Tihany designed the dining room, with bright colors, a light shade shaped like a big top, and circus paintings on the walls. The wine list holds more than 900 international selections, with a focus on France's best regions, and it earned a Wine Spectator Best of Award of Excellence in 2001. Sommeliers Freddy Montandon and Mark Hefter guide guests through pairings. The restaurant has also announced a farewell prix fixe menu ahead of its final service on August 23.
