Bistro Mariposa, at 488 Main St., Black Hawk, Colorado, is a Latin kitchen inside Monarch Casino Resort Spa. It holds a Wine Spectator Award of Excellence from 2024. The restaurant serves breakfast, lunch and dinner.
The resort describes the cooking as a twist on fresh southwestern Mexican and Latin dishes. For its Father's Day service, the kitchen offered pistachio herb crusted Colorado lamb with grilled vegetables, potato pave and adobo beurre blanc. That holiday menu was priced at $75.
Dishes are paired with high-end tequilas. Wine Spectator also gave the restaurant an Award of Excellence in 2023, so the drinks program has been recognized in more than one year.
