The story
Bludorn, at 807 Taft St. in Houston, is a New American restaurant that received the Wine Spectator Best of Award of Excellence in 2025. The restaurant sits in Montrose and has been open since August 2020, when chef Aaron Bludorn and his wife Victoria Pappas Bludorn returned to Houston to open it.
Aaron Bludorn trained at the Culinary Institute of America and worked under Daniel Boulud before becoming Executive Chef at Café Boulud in Manhattan. The menu blends American ingredients with French technique and draws on the Gulf. Dishes rotate with the seasons, so the offering changes as the produce does.
The Michelin Guide lists Bludorn as Recommended for 2026.
The drinks program pairs global wines with handcrafted cocktails. Evan White, the wine director for Bludorn Hospitality Group, selects the bottles. In the kitchen, Chef Alexandra Peña serves as chef de cuisine, and she is the first woman to oversee culinary at a Bludorn restaurant. Victoria Suazo is the general manager and leads the front-of-house team.
