The story
Victoria & Albert's, at 4401 Floridian Way in Horizon West, Florida, is a contemporary American fine dining restaurant that earned a Michelin star in 2026. The tasting menus here are built around seasonal ingredients, and the service is designed to be as deliberate as the cooking.
Chef de Cuisine Miguel Santeliz has led the kitchen since 2022. The menu changes with the seasons, and dinner runs as either a seven-course or 10-course chef's tasting menu. Before taking this kitchen, Santeliz cooked at several Walt Disney World signature restaurants, and he helped develop the menus for Remy aboard Disney Cruise Line.
The Dining Room sits beneath a grand rotunda dome, styled in Victorian motifs that echo a quiet garden. Queen Victoria's Room seats just eight guests for a 10-course meal with French trolley service and tableside preparation. The Chef's Table brings up to six guests into the grand kitchen, close enough to watch the cooks, with a champagne toast alongside the chef.
Maître d'hôtel Israel Pérez oversees the wine list, which Forbes Travel Guide describes as more than 700 varietals from 35 regions, sold by the bottle. Wine pairings are selected by the sommelier, and zero-proof pairings are also available. Pastry chef Ally Rogers designs the desserts, and the meal can close with chocolates from the resident chocolatier, served in a customized wooden box.
FACT-BOOK NOTE: Forbes Travel Guide's wine figure (more than 700 varietals) was used over the excerpt's "over 500 wines" because the trophy source ranks higher. The Michelin star is cited with its 2026 year from the trophy list; the excerpt's "since 2024" was not used.
