The story
Signature Restaurant in Helotes, Texas, runs an American kitchen with French technique at 16401 La Cantera Parkway, inside the Signia by Hilton La Cantera Resort & Spa. The restaurant holds a Michelin Guide Recommended distinction for 2026.
Executive Chef John Carpenter leads the kitchen, which follows a French brigade structure in an open kitchen where guests can watch the line work. Carpenter grew up in San Antonio, trained at St. Philip's College, and worked in several city kitchens before becoming a head chef. The menu shifts with the seasons and draws on local and organic produce, along with fresh herbs from the garden outside.
The menu pairs Gulf seafood with Atlantic oysters flown in fresh, alongside house-aged sirloin and Pacific Northwest lamb. Hill Country venison, dove, and quail also appear on the menu. Chef Carpenter's tasting menu is served Thursday through Saturday only.
The room uses salvaged oak tables, a zinc bar top, and hand-troweled plaster walls. Longleaf pine flooring came from San Antonio's old Joske's building, and a large French limestone fireplace anchors the space. The wine list earned a Wine Spectator Award of Excellence in 2024.
