The story
Soby's serves modern Southern American cooking at 207 S. Main St. in Greenville, South Carolina, and carries a Michelin Guide recommendation for 2026.
Executive Chef Jon Buck joined in 2025 after opening Husk Greenville and working at Husk in Charleston under Sean Brock. He buys from small farmers and artisan purveyors, and the menu follows suit with locally grown, seasonal ingredients. The Southern classics get a modern twist rather than a rewrite.
Shrimp and grits, crab cakes and fried green tomatoes are long-running house dishes. The white chocolate banana cream pie has been on the menu for more than 20 years. Pastry Chef Tarcy Harger, originally from Brazil, turns out the nightly desserts.
Wine Spectator named Soby's a Grand Award winner in 2025, one of only 96 restaurants worldwide with the designation. The list runs to thousands of bottles, and a sommelier team helps guests choose.
The building was a Shoe Mart before Soby's opened in November 1997. Renovation uncovered interior brick under old plaster and a skylight behind ceiling tiles. Table 301, at the top of the stairs on the mezzanine, looks over the kitchen and the dining room. In good weather there are tables on the patio.
