The story
Rustic Canyon, a Californian kitchen at 1119 Wilshire Blvd in Fort Collins, received a Michelin Recommended listing in 2026. The same year, the We're Smart Green Guide awarded it 4 Radishes. The restaurant pairs a wine bar with a seasonal menu built around local produce.
Executive Chef Elijah Deleon runs the kitchen, and the menu shifts with what local growers bring in. Recent plates have included bluefin tuna crudo with melon and chipotle oil, grilled oyster mushroom with al pastor flavors, and a Flannery beef ribeye served with summer succotash. Broiled oysters with garlic butter and a half chicken salvadoreno also appear on the dinner list.
The wine list holds more than 300 bottles, selected by Wine Director Kathryn Coker, with many small producers. Bartenders make bitters, tinctures and orgeats in-house, and cocktails follow the seasons. Happy hour in the bar and lounge runs daily and features Mexican-California dishes inspired by the chef's mother and grandmother, with walk-ins only.
