The story
Herons, the restaurant at The Umstead Hotel and Spa in Cary, North Carolina, serves American cuisine at 100 Woodland Pond Drive and holds a Forbes Travel Guide Five-Star rating for 2026. The kitchen works in a regional American style, and the evening tasting menu is its clearest statement of that approach.
The dining room seats 98 in a hushed, elegant space with floor-to-ceiling windows that look out over the wooded grounds. A full-view kitchen lets guests watch the cooks at work. Conversation stays easy over a low murmur from diners, hotel guests and bar patrons, and piano music fills the room, with live jazz on Friday and Saturday evenings.
Dinner is by reservation and comes as a three- or four-course meal, or as the chef's eight-course kaiseki dinner. Ingredients are drawn from the hotel's One Oak Farm, and an à la carte menu is available for guests who want a more personal selection. Earlier in the day, breakfast and lunch are served in a relaxed, refined casual style, and the restaurant holds a Michelin Recommendation for 2026.
The wine list offers more than 1,600 bottles, a deep bench for a tasting menu. Craft beer and signature cocktails are also available at the bar.
