The story
Auro, at 400 Silverado Trail N. in Calistoga, California, serves contemporary American cuisine built on French technique, and it holds a Michelin star (2026). The restaurant sits on the grounds of Four Seasons Resort and Residences Napa Valley, a few minutes from the town of Calistoga.
Executive Chef Evan Neumann works from hyper-seasonal Napa Valley ingredients. His training includes the kitchens of Joël Robuchon, Alain Ducasse and Anne-Sophie Pic. The cooking also draws on Mexican and Japanese traditions, so a single course may carry three different influences.
The seasonal tasting menu runs to seven courses. Mediterranean sea bream arrives with cosmic apple and mandarin-tamarind aguachile, and 28-day dry-aged Australian wagyu comes with hibiscus beets and Oaxacan mole de Novia. Dessert is namelaka chocolate with hazelnut dragée and an infusion of roasted coffee and cocoa nibs. The menu changes daily.
The dining room is intimate and overlooks the vineyards and mountains. Guests can also sit at the Chef's Table inside the kitchen. Sommelier and beverage manager Derek Stevenson oversees a 750-label list focused on small and family-operated Northern California wineries, and the program has held Wine Spectator's Best of Award of Excellence since 2023.
