The story
Frasca Food & Wine serves Friulian-inspired Italian cooking at 1738 Pearl St. in Boulder, Colorado. It holds one Michelin Star as of 2026, awarded for high quality cooking.
The name comes from the neighborhood frasca of Friuli-Venezia Giulia, an informal gathering place for farmers, friends and families, once marked by a branch hung over the doorway. The Boulder kitchen reads that northeastern Italian tradition through a Colorado lens. The restaurant calls itself a special occasion address, and most guests dress a little on the dressier side.
Ian Palazzola is executive chef, and Alberto Hernandez runs pastry. The Quattro Piatti menu moves through antipasti, primi, secondi and dolci. A recent version listed risi e bisi with aged carnaroli rice, English pea and taleggio, and blecs verdi with faraona ragu and guanciale. Colorado lamb appeared among the secondi. Dessert might be cherry crémeux with pistachio ganache. Gluten free and vegetarian adjustments are possible.
Bobby Stuckey, a partner and Master Sommelier, anchors the wine side, and Wine Spectator gave the restaurant its Best of Award of Excellence in 2011. The list is organized by flavor profile, varietal and theme, so guests can read it however they like. Pairings are curated by Carlin Karr and Jeremy Schwartz, and the by-the-glass pours lean toward Friuli.
