The story
Docket Restaurant at 33 High Street, Whitchurch, is a Modern British kitchen that The Good Food Guide rated Very Good for 2026. Stuart and Frances Collins opened it in August 2017 in the North Shropshire market town, and the menu is built around a tasting format.
Stuart Collins trained with Michael Caines at Gidleigh Park and with Gordon Ramsay in London and New York. He later worked as an executive chef in Chester and across several projects in Doha before returning to open Docket. The kitchen works with seasonal produce from small local growers and producers, and the Good Food Guide inspector found inventive thinking across the tasting menus.
The sample tasting menu lists hand cut pappardelle with Shropshire lamb shoulder and a basil and sunflower seed pesto, plus hake with red pepper, fennel and saffron sauce. Dishes change with the seasons, so the line-up on any given night may differ. A recent inspection described quail with a spiced crust, a leg given a pakora batter, and a quenelle of yellow dhal.
Guests can dine in the main room, at the chef's counter, or in a private room for five to eight people, reached by walking through the open kitchen. Paintings by local artist Sam Pooley-Stride hang in the dining rooms. The wine pairing changes with each course, and the wine list is hand-picked from a set of regular suppliers.
