The story
Root Wells is a modern European restaurant at 12 Sadler Street in Wells, Somerset. The Michelin Guide awarded it a Bib Gourmand in 2026 for good quality, good value cooking. The vegetable-led menu is designed for sharing and changes daily with local produce.
Rob Howell, who opened the original Root in Bristol's Wapping Wharf, leads the kitchen. The restaurant works closely with local suppliers and producers under a "more veg, less meat" approach. Dishes shift with the seasons and may differ from the sample menu. Most can be adjusted for dietary requirements if you tell the team.
The Old Winchester cheese puffs with brown sauce are a signature snack, ethereal in texture. In spring, asparagus arrives dressed with sauce gribiche and hazelnuts. For dessert, an oat-milk lemon posset comes with poached cherries and crumble.
