The story
Sushi Kanesaka is a Japanese restaurant in London at 45 Park Lane, Mayfair, where Edomae sushi earned a Michelin star in 2026. The restaurant sits above Park Lane in the Dorchester Collection's 45 Park Lane hotel, and it is chef Shinji Kanesaka's first restaurant in Europe.
Shinji Kanesaka arrived from Tokyo's Ginza district, where he trained in the precise techniques of traditional Edomae sushi. The kitchen cures its fish so the flavour of each cut comes through clearly. The restaurant won its first Michelin star within seven months of opening, and the AA has since awarded it three Rosettes.
The meal is omakase, a Japanese word meaning "I'll leave it up to you." The chef selects each piece from Japan's seasonal ingredients, so the order changes with what is available that day. Because of this, the menu cannot be adjusted for individual dietary needs. Japanese whiskies are offered as pairings, made with techniques handed down through generations.
The room is built around a single carved piece of hinoki wood, lined by bent wood chairs modelled on Wegner's Wishbone design. Designer Itai-san used wooden kumiko panels that echo the shapes of the Hyde Park landscape. Hinoki ice-chests, a tool dating to the Edo period, keep the fish at a steady temperature. Your host, Nanami-san, works as okami-san, the role that guides the evening.
