The story
Daise by Tony Parkin is a modern British restaurant in Liverpool, at 11 Rose Mount in Oxton, Birkenhead CH43 5SG. It holds the 2026 AA 2 Rosette Award for Culinary Excellence, and the kitchen serves a chef-led tasting menu rather than an à la carte list.
Tony and Laura Parkin run the restaurant together, and Tony writes every menu. The cooking follows hyper-seasonal produce and modern techniques. Menus change with the seasons, with scheduled shifts in April, July, October and January and smaller adjustments in between.
The Signature Menu costs £110 and has a pescatarian counterpart, with a vegetarian tasting menu available on 72 hours' pre-order. Recent listings have included Guinness and treacle bread with Winter Tarn butter, and hot and sour broth with line caught squid and kaffir lime. Orkney scallop comes with Iberico ham and jalapeño, while Herdwick lamb is served with aubergine and wild garlic. The meal ends on yuzu with Gariguette strawberry and purple shiso.
The room is stylish and intimate, and every guest dines at the same allocated time. An optional wine pairing flight is available for £75, drawing on fine wines and other drinks. A shorter midweek and lunch tasting menu is also offered at £75 per person.
