The story
Chapters is a British restaurant on Lion Street, Hay-on-Wye (HR3 5AA), listed as Michelin Recommended in 2026. Charmaine and Mark McHugo run it alongside an on-site bottle shop.
The menu changes with the seasons and is served as a set menu, which lets the kitchen concentrate on each dish and avoid food waste. It can be adapted for most dietary requirements if you mention it when booking. Much of the produce is local, and some comes from the restaurant's walled kitchen garden, eight miles away. The garden is worked no dig and without chemicals, and the We're Smart Green Guide awarded Chapters 1 Radish in 2026.
The wine list leans organic and low intervention. Locally produced beers, ciders and spirits sit alongside it, and every bottle can be bought to take home from the shop.
