The story
The Kitchin is a modern cuisine restaurant at 78 Commercial Quay in Leith, Edinburgh, and it holds one Michelin star in 2026. Chef-patron Tom Kitchin opened it in 2006, and it has stayed a benchmark for seasonal Scottish dining in the city ever since.
Kitchin trained under Pierre Koffmann, Guy Savoy and Alain Ducasse, and that grounding shapes the modern British cooking here. Produce comes in fresh each day from a small group of suppliers. Meat and fish arrive whole and are butchered and filleted in-house. Head chef Lachlan Archibald leads the kitchen, with Kitchin appearing at the pass.
The signature is a boned and rolled pig's head with roasted west coast langoustine tail. The Good Food Guide praised a venison carpaccio on bone-broth jelly and a braised beef shin with Café de Paris butter. It also noted a Hebridean lamb pithivier with fine pastry work, and a towering lemon soufflé with local crème fraîche. The surprise tasting menu is the route the National Restaurant Awards recommend, with vegetarian and prestige versions and a carte alongside. The kitchen also holds 5 AA Rosettes (2026).
The restaurant occupies a converted whisky bonded warehouse in Leith's old docks. The dining room is built around the original stone and wood, intimate and relaxed. A glass window lets guests watch the team cook. The 30-page wine list leans on Burgundy and Bordeaux, and the whisky selection runs from Islay and Speyside to the Lowlands and the islands.
