The story
Cardinal serves modern cuisine at 14 Eyre Place in Edinburgh, and the Good Food Guide rated it Very Good in 2026. Tomás Gormley is chef patron, and the restaurant is a companion to his Stockbridge venue, Skua.
The kitchen builds its tasting menus around Scottish produce and changes them with the seasons. Recent menus list smoked cod roe in a Hokkaido milk bun, sea trout with sorrel, aubergine with crowdie, asparagus agnolotti and mutton. The Good Food Guide singled out a roasted onion broth infused with Douglas fir, a Carlingford oyster finished with beef tallow and gherkin, and smoked Belhaven lobster under a lobster bisque with a little chilli heat.
The dining room is done in black, with orbs of golden light, abstract canvases and a few unclothed tables. The Guide's inspector praised the engaged service and called it "just a wee gem". Cardinal also holds a Michelin Recommended listing for 2026. The whole restaurant can be hired for up to 24 guests, and the private dining room seats 10.
The wine list sticks to European producers working organically or regeneratively. It runs from Champagne and Loire chenin to Jura, Georgian skin-contact wines and a bottle from South Wales. Pairings are a natural fit with the tasting menus.
