The story
Stark is a Modern British restaurant on East Road in East Mersea (CO5 8TQ), near Colchester, and it holds one Michelin Star in the 2026 guide for high quality cooking.
Dinner is a single tasting menu with no alternatives, and it changes whenever the ingredients or the chef see fit. Ben Crittenden cooks, and his wife Sophie looks after the guests. They moved to Essex in summer 2024 after running the original Stark in Broadstairs, which opened in December 2016. The Good Food Guide rated the restaurant Very Good in 2026.
Duck liver parfait is a fixture, set on a puck of confit duck with thin gingerbread and a fruit purée that moves between orange, smoked apple and cherry. Fish might be halibut poached in butter with cucumber, turnip, brown shrimps and seaweed sauce. Later courses have included shh'annu lamb with a potato-lamb dumpling and truffle, and wagyu rump with salsa verde, beetroot and blackcurrant. Artichoke ice cream with goat's curd and honey granola arrives near the end, followed by dulce de leche cake and a dark chocolate sorbet. An optional five-glass wine pairing runs alongside.
The building sits beside a quiet road on Mersea Island. Inside, dark-painted walls and bold steampunk art will be familiar to anyone who knew the Broadstairs original. There is no dress code, and guests are simply asked to sit back and trust the kitchen. Because the menu is fixed, the restaurant cannot offer substitutions or cater for dietary requirements.
