The story
The Two Pigs is a Modern British gastropub at 47 Main Street, Barton-under-Needwood, near Burton upon Trent, and it holds 2 AA Rosettes for 2026.
Liam Dillon is chef/patron of the fine-dining Boat near Lichfield, and this is his second venture. His focus on local, seasonal and sustainable produce carries over, but the setting is a casual neighbourhood pub and bistro. The name comes from Betty and Peggy, the resident pigs at the Boat.
The pork chop is the one to know: a large, juicy cut with a thick ribbon of fat and crackling, served with burnt apple purée, pommes Anna and pickled mustard seeds. Bar snacks run to Maldon rock oysters with pickled red-wine shallots and hot sauce, or fish croquettes with romesco. Dillon's signature fried chicken comes with sesame and spring onion. On the autumn menu, mains included herb-crusted lamb shank and a whole roasted plaice to share, with samphire and beurre blanc.
The walls are painted sage green. You can eat in the bar, the low-key dining room (tables for two are somewhat cramped) or the rear courtyard, and dogs are welcome. The Good Food Guide 2026 rates it Good and praises the friendly welcome and helpful service. Desserts stay classic, with tiramisu and sticky toffee pudding. There is a good wine list, plus the house Two Pigs Ale.
