The story
Sosban & The Old Butchers in Bangor serves modern British cooking from Trinity House, 1a High Street, Menai Bridge, LL59 5EE. The restaurant holds 1 Michelin star (2026) for high quality cooking, and the dinner-only room sits in a former butcher's shop on Anglesey.
Stephen Stevens works as chef and patron, often alone at a kitchen workbench in view of the room. The meal runs to nine courses, and there is no printed menu, so guests learn what they are eating as each plate arrives. The cooking is rooted in the region and built around local, sustainable produce, with zero waste as a guiding principle.
A crisp cracker of cod skin, filled with curried banana and soured peanut, opens the meal. Chicken liver parfait with diced eel, sharpened by IPA vinegar and grated Hafod Welsh Cheddar, carries a savoury punch. Confit lamb's tail arrives with silky mustard custard, apple, mustard leaf and coffee. Liquorice recurs through the menu, including in a savoury-to-sweet course with lemon and olive oil. The dessert of whipped buttermilk, compressed apple and celeriac ice cream has evolved over the years and has become something of a signature.
Four plain tables, earthy colours and an unfussy setting keep attention on the food. The Good Food Guide rates the restaurant Exceptional (2026) and singles out the bread. There is no wine list. The drinks pairing is imaginative, and individual glasses are poured by the 125ml measure.
