The story
Revithia serves tasting-menu country cooking at Davut Ağa Sokak No:1 in Ürgüp, inside the Kayakapı Premium Caves hotel. It holds one Michelin Star in the 2026 guide, the only one in Cappadocia according to the restaurant. The name means "chickpea."
The kitchen draws mostly on Turkish, Greek and Armenian recipes passed down through families. Nearly forgotten dishes are revived with modern techniques. The menu changes three to four times a year to follow local ingredients, and Gault&Millau gave the restaurant a 13 in 2026.
The 2026 tasting menu begins with tarhana purée, molasses-glazed bazlama and tarhana powder. Later courses include homemade erişte with morel mushrooms and an apricot and black garlic glaze, and crisp-roasted lamb tripe with Ağırnas yogurt and spicy Divle Obruk cheese. Lamb chop, leg and loin arrive with "kirli" bread and a charred eggplant ezme. Dessert is buffalo milk pudding with molasses, tahini and roasted walnuts. Every course can be paired with Cappadocian wines.
The restaurant sits in a historic cave, and the stone-walled indoor room seats just 25. In warmer months dinner moves to a terrace for up to 40 guests, with views over Ürgüp.
