Saffron is a Thai restaurant at Banyan Tree Samui, 99/9 Mu 4, Maret, Ko Samui, 84310, Thailand. The Michelin Guide Thailand listed it as Recommended in 2026, and it is the signature Thai restaurant of the Banyan Group.
The menu pairs traditional Thai dishes with a modern twist, alongside newer creations. Saffron began as a simple curry house and has grown into the restaurant it is today. The name refers to the spice, which the restaurant says takes about 75,000 flowers to produce a single pound.
The dining room has what the restaurant describes as understated yet refined elegance. Air conditioning, outdoor seating, parking and wheelchair access are available. The dress code is smart casual, and the We're Smart Green Guide awarded Saffron 3 Radishes in 2026.
