The story
The Smokaccia Laboratory sits at 116/4 Mu 3, Srisoonthorn Road in Kathu, Phuket, and holds a Michelin Recommended (2026) listing. Chef Luca Mascolo serves an evening tasting menu built on molecular gastronomy, where each dish starts with flavour and is refined through fermentation, infusion and extraction.
Luca Mascolo trained at Michelin-starred restaurants and Aman resorts, and he was head chef at Amanpuri in Thailand. He spent more than ten years developing the Smokaccia sourdough, which earned him a Culinary Scientist award in Bangkok. The menus run to 9 or 18 courses, and the 18-course vegetarian and vegan version is one reason the restaurant received 5 Radishes (2026) from We're Smart Green Guide.
Guests choose between a table or the open kitchen counter, where they can watch the final touches go onto each plate. Sommelier Massimo Zoz selected the wine pairing, which leans toward Italian bottles. The non-alcoholic pairing includes a homemade non-alcoholic gin and the Phuket Basil Breeze, a pineapple drink finished with fresh basil at the table.
