The story
Marmo is a modern Alpine restaurant at Furi 209, Zermatt, Switzerland, where the kitchen earned 13 Gault&Millau points in 2026. Perched on the Furi slopes near the gondola, it pairs mountain produce with Italian influences.
Alessandro and Sergio Grand, two local brothers, run the house together. Sergio leads the kitchen and brings experience from Zermatt, Grindelwald, Zurich and Copenhagen. He grows herbs in an indoor garden, and the sourdough arrives from Bäckerei Artis in Brig.
The Alpine menu moves from pappardelle al ragù, made with beef shoulder and Parmigiano aged 24 months, to pork cheeks with mountain potato purée. Cured char comes with radish tartare, wild berry sorbet and beurre blanc, while the poached organic egg sits on airy mashed potatoes. Diners who prefer poultry can order duck breast with gnocchi and thyme jus.
