The story
Wirtschaft zur Rosenburg, known locally as the Höfli, serves Swiss country cooking at Alter Postplatz 3 in Stans. Gault&Millau awarded it 14 points in 2026. The restaurant occupies an 800-year-old manor house, and the menu mixes regional Nidwalden produce with a few dishes from further afield.
Chef Pascal Billo works alongside hosts Evelyn and Lukas Christen. The kitchen buys from nearby producers, including alpine cheese from the Gerschnialp and Bleikialp, meat from Stans and Wolfenschiessen, and fish from Ennetbürgen. A weekly menu includes a vegetarian option, and a lunch card runs alongside the midday menu.
Scallops are seared and set on risotto with cauliflower, herb pesto and lemon. Scottish salmon is marinated in whisky and smoked lightly by Räucherei Waser in Beckenried, served with pumpkin, lentils and hummus. The roe deer entrecote arrives rosy at the centre, with port sauce, toasted hazelnuts and airy bread dumplings. The meal often ends with gingerbread mousse and mandarin parfait.
The Turmstube, the heart of the house, seats up to 54 for dinners and banquets. The smaller Nidwaldner-Stube suits intimate gatherings, and the Keyser-Stube has a tiled stove from the original interior. In summer, the courtyard garden looks toward Stanserhorn and Pilatus and serves lighter dishes and house-made desserts.
