The story
Zum Kaiser Franz at Vorstadt 8 in Schaffhausen is an Austrian restaurant that holds a Michelin Bib Gourmand for 2026, awarded for good quality, good value cooking. The menu is built on Viennese and Styrian classics, with daily specials and seasonal dishes added on top.
Kaiser Felix Franz handed the restaurant to his daughter Lisa Franz in spring 2025. Gault&Millau gave it a score of 13 for 2026, noting a light refresh of the room while the Austrian specialties stayed in place.
The Wiener Schnitzel is made from veal and served with potato and cucumber salad and homemade cranberries. Other mains include Old Viennese Tafelspitz with chive and horseradish sauce, creamy veal goulash with bread dumplings, and Viennese fried chicken. The soup list includes Graz wedding soup with liver dumplings, and vegetarians can order a crispy aubergine schnitzel.
The Kaiserschmarren comes with plum roaster, and the apple strudel is homemade and served with vanilla sauce. Finish with a Viennese iced coffee topped with whipped cream. The wine list leans heavily on Austrian bottles, with Sauvignon Blanc from Southern Styria, Grüner Veltliner from the Wachau, and reds from Burgenland.
