The story
La Maison du Village, at Rue de la Fontanette 41 in Saint-Aubin-Sauges, Switzerland, is a seasonal kitchen that received a score of 15 from Gault&Millau in 2026. The restaurant also holds a Michelin Recommended mention for the same year, and its short menu changes with the market.
Marc Strebel has led the kitchen since 2012. He trained at the Palace de Montreux and then worked at several establishments in the region. His cooking starts with the product and with nature, and he describes the style as fresh, spontaneous and creative. Gault&Millau praised the market-fresh cuisine for being free of fuss.
Gault&Millau singled out a cold-smoked salmon with Jerusalem artichoke, pear and hazelnut as an accomplished opening course. A grilled Jura entrecote, cooked over Binchotan charcoal, came with curly kale, Chinese artichoke, Buddha's hand citron and a sauce made with local chili. The amuse-bouches included a soft egg with corn and saffron served in a glass and fish rillettes with turmeric and vin jaune.
The dining room is simple and elegant, and the terrace looks out over Lake Neuchâtel. Caroline Arlettaz leads the front-of-house team, and she recommends drinks to match the meal, including a beetroot and spice drink with Neuchâtel gin. The meal ends with a pre-dessert of chestnut, pear and quince, followed by a winter composition of clementine, carrot, pumpkin, tapioca and pomegranate, then mignardises.
