The story
Traube is a French restaurant at Baslerstrasse 211 in Trimbach, in the Olten area, and it holds one Michelin star in the 2026 guide. Arno Sgier has been chef and owner since 1993.
Sgier grew up on a farm in Surin, Graubünden, and trained in Flims. He later cooked in Losone, Gottlieben and Neuendorf, then ran the kitchen at La Grappe d'Or in Lausanne before taking over Traube. His approach is seasonal produce bought in close contact with vegetable growers, butchers and wine merchants. Gault&Millau rates the cooking at 17 points (2026).
Recent menus list a soufflé egg with morels, an oxtail raviolo with Périgord truffle and skate wings with beurre blanc. Gault&Millau also praised young Ormalingen pork shanks, crisp outside and juicy within, served with the season's first peas. The eight-course Vorspeise menu changes every four weeks. Cheese from the trolley comes before dessert, which on one visit was strawberry sorbet with marinated rhubarb.
Sgier began building the cellar in 1993, and it now holds more than 1,000 wines. Guests can reserve bottles in advance or ask the sommelier, and most wines are also poured by the glass. The interior is modern and polished, and a garden terrace has been open for summer days since 2008.
