The story
Bad Schauenburg, at Schauenburgerstr. 76 in Liestal, Switzerland, serves Classic French cooking and earned 15 points from Gault&Millau for 2026. The restaurant occupies a former bath house above Liestal, now a seminar hotel with a park, a Baroque garden and a koi pond.
Francis Mandin is chef de cuisine, and the kitchen keeps a restrained classic French style. Gault&Millau's reviewers liked the opening courses, including a white asparagus soup with wild garlic and a langoustine carpaccio with flamed citrus. The veal fillet ballotine wrapped in raw ham, served with port wine jus, rescued a mixed main course, though the saffron risotto beside it was too coarse.
The Gourmet Basler Stübli serves a five-course menu at CHF 119 per person, drinks excluded. The Brasserie Bad Schauenburg offers four courses for CHF 89, and Bistro Zum Schauenegg serves three courses for CHF 59. Michelin lists the house as Recommended for 2026. The Schauenegg, with its garden terrace, serves regional Baselbiet country cooking.
