The story

Mulania Brasserie Flims: French Brasserie Cooking, Gault&Millau 15 (2026)

Mulania Brasserie, at Via Murschetg 15 in Flims, is a French brasserie with a modern French kitchen, and Gault&Millau awarded it 15 points for 2026. Chef Sascha Meyer and hostess Yvonne Marx run the room together, pairing classic brasserie plates with Graubünden specialities.

Chef and cooking style

Sascha Meyer cooks classic French food with a modern touch. Before opening this brasserie, he and Yvonne Marx led the gourmet restaurant Mulania for 13 years, which Gault&Millau scored at 16 points several times. Sea fish is his specialty, and the fish and shellfish arrive fresh every day. Michelin lists the restaurant as Recommended for 2026.

Standout dishes

The menu moves from oysters and lobster bisque to bistro favourites like Entrecôte Café de Paris with pommes allumettes and Boeuf Bourguignon. Local dishes include Capuns, quark pizokels and house-made ravioli. One reviewer praised the whole sole à la meunière with lobster foam and spinach risotto, and the crisp Wiener Schnitzel with Laaxer Rösti. The Mediterranean fish soup, by contrast, was judged to need more seafood.

Room and cellar

The walk-in vaulted cellar holds more than 200 wines, with a focus on Swiss, French, Austrian and Italian bottles. The hosts taste and age the stock themselves, and they can suggest a sweet wine for cheese or dessert. The sun terrace serves the full kitchen menu from 3 p.m., which suits skiers coming off the slopes.

Gault&Millau — 15

The "White Arena Laax" is often a bustling hub, defined by its imposing Rock Resort, cable car stations, hotels, and countless winter sports visitors. Against this backdrop, the "Mulania" stands out as a tranquil oasis of refined French hospitality. Hostess Yvonne Marx and executive chef Sascha Meyer have successfully shaped their concept into an upscale bistro style. The menu offers oysters, foie gras, caviar, Entrecôte Café de Paris, escargots, oxtail clair, and Bœuf bourguignon, alongside Wiener Schnitzel and, as a local tribute to Graubünden, Capuns. We began with a Gillardeau oyster No. 2, while the delicately spiced lobster bisque, generously loaded with lobster meat, brought a taste of the ocean to the Grisons mountains. The beef carpaccio with pan-seared goat cheese was also a hit. However, the "Mediterranean fish soup" could have used more seafood; we would have happily accepted a couple of mussels, some prawns, or a slice of red mullet fillet. On the other hand, the whole sole prepared à la meunière, accompanied by lobster foam and creamy spinach risotto, was impeccable. The hearty Wiener Schnitzel, boasting a delicate crust, cucumber salad, lingonberries, and "Laaxer Rösti", also aligned perfectly with the brasserie concept and menu. For dessert, the cream slice was crisp and fresh. The establishment boasts a well-stocked wine cellar. PS: Hungry skiers will be glad to know that starting at 3 p.m., the full kitchen menu is available at the "Mulania" and on its sun terrace.
